    Easy, Delicious Roasted Mushrooms – The Perfect Keto Side Dish for Steak or Omelette!

    Ingredients

    • 16 button mushrooms (preferably uniform in size and quality)
    • 1 handful of fresh flat-leaf parsley
    • 3 cloves of garlic, finely chopped
    • Extra virgin olive oil
    • Salt and pepper to taste

    Instructions

    1. Preheat your oven to 220°C (428°F) using the grill setting.
    2. Trim the stems of the mushrooms (set aside for another recipe or roast alongside the caps).
    3. Finely chop the fresh parsley and garlic, then combine with 3 tablespoons of extra virgin olive oil.
    4. Arrange the mushroom caps on a baking sheet lined with parchment paper, placing them hollow side up.
    5. Fill each mushroom cap with the garlic, parsley, and olive oil mixture. Season with salt and pepper, and drizzle with additional olive oil if desired.
    6. Roast in the preheated oven for approximately 20 minutes, or until the mushrooms are golden, slightly dehydrated, and roasted on top.
    7. Serve hot or warm as a delicious side with sautéed or roasted meats, or pair with fish like salmon for a flavorful dish.
