- 2 tbsp (30 mL) canola oil
- 2 chopped onions
- 1 tbsp (15 mL) minced garlic
- 2 diced celery stalks
- 2 sprigs fresh thyme
- 1 bay leaf
- 3 tbsp (45 mL) all-purpose flour
- 5 cups (1.25 L) beef broth
- 1/4 cup (60 mL) tomato paste
- Salt and pepper to taste
- 6 carrots, chopped
- 6 peeled and cubed potatoes

Instructions
- Preheat the Oven: Set your oven to 190°C (375°F).
- Prepare the Meat: Pat the stewing beef dry using paper towels. In an ovenproof pan or casserole dish, heat canola oil over medium-high heat.
- Sear the Beef: Working in batches, sear the beef cubes for 2 to 3 minutes on each side until they are golden brown. Once browned, transfer the cubes to a plate.
- Sauté Onions: Remove any excess fat from the pan. Using medium heat, sauté chopped onions for 1 to 2 minutes until they become translucent.
- Combine Ingredients: Return the seared beef to the pan. Add minced garlic, diced celery, and fresh thyme.
