Each June, our cozy mountain valley hosts a week-long VBS kids camp, drawing over 100 children despite our town’s small size and rustic setting. Nestled among pine trees and snow-capped peaks, the quiet mornings during camp let me savor rare moments of stillness—and even a bit of extra sleep!
Today, I felt a surge of energy and found joy in simple tasks, like scrubbing the kitchen counters, a small but satisfying win. I also prepared a batch of delicious apple pie bites—a perfect, healthy treat for any pie lover. These hand-sized snacks bring all the flavors of classic apple pie into a fun, bite-sized delight that’s ideal for kids and adults alike! The whole family couldn’t wait to get their hands on them, making them an instant hit in our home.

- 1/4 cup almond flour
- 1/4 cup arrowroot flour
- 1/4 cup golden flax meal
- 2 tbsp melted coconut oil (plus 2 tbsp for apples)
- 2 tbsp coconut flour
- 1 tbsp water
- 1 tsp vanilla extract
- 1 tbsp honey
- 1/8 tsp salt
- Apple Filling
- 1/2 small apple, diced
- 2 tbsp coconut sugar
- 1 tbsp cinnamon
- Pinch of salt

Instructions
- Prepare the Pastry Crust: In a mixing bowl, combine 1/4 cup arrowroot flour, 1/4 cup almond flour, 1/4 cup flax meal, 2 tbsp melted coconut oil, 1 tbsp water, 1 tsp vanilla, 1 tbsp honey, and 1/8 tsp salt. Mix until the dough begins to bind.
- Roll Out the Dough: Place the dough between two sheets of parchment paper and roll it out to about 1/4 inch thickness. Cut into 3-inch squares.
- Add the Apple: Brush each dough square with melted coconut oil. Slice 1/2 small apple into 1/2-inch slices and place one slice on each square.
- Add Cinnamon-Sugar Topping: In a small bowl, mix 2 tbsp coconut sugar, 1 tbsp cinnamon, and a pinch of salt. Sprinkle about 2 tsp of this mixture over each apple slice.
- Enclose the Apple Bites: Gently fold and press the dough around each apple slice to fully enclose it, allowing some cinnamon sugar to blend into the dough.
- Bake: Arrange the apple pie bites on a baking sheet and bake at 300°F (150°C) for 20 minutes, until golden brown.
