    BBQ Crock Pot Roast is a super flavorful pot roast recipe with lots of BBQ flavor. Chuck roast is cut into pieces and slow cooked with lots of seasoning. Then its coated in sauce and broiled until caramelized to intensify the flavors.

    Don’t want to use a slow cooker? Try this BBQ Pot Roast Recipe. It is very similar, but cooked entirely in the oven.

    2-Step Cooking Process

    1. Step 1- Slow Cooking. The chuck roast is cooked with onion and lots of seasoning until wonderfully tender.
    2. Step 2- Broiling. The beef pieces are removed from the slow cooker and the cooking liquid is discarded. They are coated in a mixture of BBQ sauce, A-1 sauce, and brown sugar and broiled until caramelized.

    How To Serve BBQ Crock Pot Roast

    Cane be served over mashed potatoes or white rice or as a sandwich. Also makes a great filling for quesadillas or burritos. Creamy Dill Potato Salad, Buttermilk Cornbread, and Creamed Corn make great sides.

    Type of BBQ Sauce To Use

    I like to use a thick, sweet BBQ sauce like Sweet Baby Ray’s.

    Make It Spicier

    Use a spicy bbq sauce to make this recipe spicier.

    How Long To Cook

    Cooking times with slow cookers can vary greatly. Cook on Low for about 8 hours or on HIGH for about 5 hours. It may be done sooner. Be sure the beef shreds easily. If not, it probably needs to cook longer.

    Type Of Meat To Use

    I like to use chuck roast for this recipe. The fat marbling in it keeps it really tender and juicy and gives it lots of flavor. Chuck roast can have a lot of fat so be sure to cut off as much excess fat from it as you can.

    Storage

    Leftovers will keep for 4 days in an airtight container in the refrigerator or it can be frozen for up to 2 months.

    How To Reheat

    I think the best way to reheat is in a skillet. You may want to add a little more bbq sauce.

    Ingredients

    • ▢ 2 1/2 to 3 pounds boneless chuck roast
    • ▢ 1 large onion, sliced
    • ▢ 4 garlic cloves, chopped
    • ▢ 1 1/4 teaspoons salt
    • ▢ 1 teaspoon black pepper
    • ▢ 1 teaspoon paprika
    • ▢ 1 teaspoon crushed red pepper flakes
    • ▢ 2 bay leaves
    • ▢ 1 tablespoon Worcestershire sauce
    • ▢ 2 tablespoons apple cider vinegar
    • ▢ 1/2 cup beef broth

    Sauce

    • ▢ 1 cup BBQ Sauce
    • ▢ 1/4 cup A-1 Steak Sauce
    • ▢ 1 tablespoon packed brown sugar

    Instructions 

    • Cut chuck roast into 2-inch pieces. Place onion and garlic in the bottom of a 6-quart or larger slow cooker.
    • Add beef chunks. Sprinkle salt, pepper, paprika, and crushed red pepper flakes over beef. Add bay leaves.
    • Pour Worcestershire sauce, apple cider vinegar and beef broth over pork.
    • Cover slow cooker and cook on LOW for 8 hours or on HIGH for 5 hours.
    • Remove the beef pieces with a slotted spoon and place them on a rimmed baking sheet lined with aluminum foil.
    • In a bowl stir together BBQ Sauce, A1 Sauce, and brown sugar.Pour mixture over beef pieces.Broil until crispy, about 5 minutes, watching carefully so it doesn’t burn.

    Notes

    Use your favorite store-bought or homemade bbq sauce for this recipe. I like to use a fairly thick one that is both sweet and spicy, like Sweet Baby Rays.
