    Ingredients

    • 1 can (354 mL) of evaporated milk – Adds creaminess to the sauce.
    • 454 g (1 lb) of uncooked penne pasta (approximately 4 cups) – A perfect pasta choice to hold the rich sauce.
    • 375 mL (1 1/2 cups) of frozen peas – Provides a pop of color and nutrition.
    • 500 mL (2 cups) of chopped or shredded roast chicken – Use leftover roast chicken for added flavor and convenience.
    • 1 jar (450 g [15 oz]) of Alfredo pasta sauce – Choose your favorite brand for a quick and creamy base.
    • 250 mL (1 cup) of grated Parmesan cheese – For a flavorful finishing touch.

    Instructions

    1. In a 4.7 L (5-quart) non-stick casserole, combine evaporated milk, 1 L (4 cups) of hot water, and uncooked penne pasta. Bring the mixture to a boil over high heat.
    2. Once boiling, reduce the heat to medium-high and cook for 7 minutes, stirring frequently. There's no need to drain the pasta.
    3. Next, lower the heat to medium and add in frozen peas, chopped roast chicken, and Alfredo pasta sauce. Cook for an additional 3 to 5 minutes, stirring frequently until everything is well combined and heated through.
    4. Remove the casserole from heat and gently stir in grated Parmesan cheese until melted and creamy.

    Notes

If you're looking to switch things up from chicken, try substituting with chopped ham or cooked shrimp for a delightful twist on this classic dish. For a nutritious alternative to peas, consider using a 150 g (5 oz) bag of baby spinach. Simply toss the spinach with the cheese and continue stirring until the heat from the pasta wilts the greens, creating a vibrant and flavorful addition to your creamy Alfredo pasta.
